Vegetarian Samosa

Samosa is a fried filled pastry in a shape of a triangle. It can be filled with vegetables and/or meat. It is a very popular snack or a starter in Indian restaurants, served with a salad or raita sauce.

Filo pastry is originally from Balkan, where it is used as a base for preparation for example a very well known dessert called baklawa.

Ingredients
  1. 200 ml vegetable oil
  2. 1 onion
  3. 1 clove garlic
  4. 175 g carrot, chopped into small cubes
  5. 225 g potatoes, chopped into small cubes
  6. 1 red bell pepper, chopped into small cubes
  7. 100 g peas
  8. 1 tsp. cumin
  9. 2 tbsp. curry paste
  10. 3 tbsp. mango chutney
  11. 2 tbsp. corriander, minced
  12. 16 filo pastry sheets
Instructions
  1. Heat 2 tbsp. of oil in a wok pan and fry the onion and garlic for 1 mminute. Add the carrots, potatoes and pepper. Fry for 5 minutes. Add the curry paste and cumin. Fry for 2 minutes and then add 2 tbsp of water, cook for 5 minutes on low heat. Add coriander, mango chutney and peas, remove from the heat.
  2. Cut the filo pastry lengthwise and grease gently with oil. Put a bit of the filling on each piece of the pastry and close it into a triangle (follow the instructions on the pastry pack).
  3. Fry few triangles in the rest of the oil, then drain away. Fry another few triangles and then another until all are done.
  4. Serve with a salad and a sauce of your choice.
