I bake these banana oatmeal cookies whenever I feel the need of healthier sweets, or whenever I have ripe bananas and don’t feel like making banana bread or banana pancakes. And since some time, I planned to share this recipe here but I actually realized I have never did! I even photographed them for a recipe ebook I participated in, yet I never published it here! And recently when I was making them again for Adeline and shared some stories on Instagram about it, I got quite a lot of requests for the recipe, so that pushed me to publish it finally here too! 🙂
These in the pictures are with goji berries, but I also love to make them with dark chocolate! Because who can resist the banana-chocolate combination right? So for example last time when I made them primarily for Adeline, I put goji berries in half of the batter and dark chocolate chips into the other half. She loves goji berries, somehow I once put them into her porridge in the morning and since then I hear all the time she wants to add goji somewhere. 🙂

I love to make these banana oatmeal cookies when we travel somewhere as they are ok to transport in a box or in a food bag, easy to eat, and nicely portioned. As they are a bit cakey, it gives you a feeling you still eat a kind of a dessert but also they contain less sugar, enough fiber and healthier fat than butter. They are so good and I hope you will enjoy them like us!

Ingredients
½ coconut oil
¾ granulated sugar
1 egg
1 cup mashed banana (2-3 ripe bananas)
1 ½ cup all-purpose flour
1 tsp. baking soda
1 tsp. salt (less if you make it for little children)
1 tsp. cinnamon
¼ tsp. nutmeg
2 cups rolled oats
½ cup goji berries or dark chocolate chunks
Instructions
In a large bowl, mix sugar with egg and coconut oil, add the mashed banana and whisk until smooth.
In another bowl, combine flour with baking soda, salt, cinnamon, and nutmeg. Stir in the rolled oats.
Gradually incorporate the dry ingredients into the wet ingredients and combine well. Fold in the dark chocolate chunks or goji.
Preheat the oven to 175°C and line a baking sheet with parchment paper.
Drop about 2 tablespoons batter per cookie on the baking sheet, leaving enough space around (as they may slightly grow in diameter in the oven), and gently flatten.
Bake in an oven preheated for about 15-17 minutes until slightly golden. Allow to cool down and enjoy!
