Cauliflower Croquettes with Spicy Tomato Salsa

Since the last two weeks, I have a cauliflower season at home. I love cauliflower! You can prepare it quite easily, it is healthy and so good! Don´t you think so? So here I come with these yummy cauliflower croquettes with Parmesan and Gruyère served with spicy tomato salsa and there is still a delicious cauliflower soup to come later on! 😉

These cauliflower croquettes with Gruyère and Parmesan served with a spicy tomato salsa is a delicious finger food that not only vegetarian guests will love! I felt in love with these already last winter when preparing them for a tapas party at home. Since then, I have done them several times and believe me, it is not easy not to eat too many of those! 😉

I got the original recipe for cauliflower croquettes from a French magazine 750g, just replaced Comté for Gruyère. And I did not like the idea to serve these goodies just with a ketchup-like sauce. The croquettes are delicious with something hot, so I made my own salsa. I hope you will like it – please let me know!

Cauliflower Croquettes
  1. ½ cauliflower
  2. 1 egg
  3. ½ onion
  4. 25 g ground Gruyère
  5. 25 g ground Parmesan
  6. 30 g bread crumbs
  7. ½ chives bundle (1/3 cup chopped)
  8. salt and pepper to taste
  9. olive oil for smear
Spicy Tomato Salsa
  1. 1 tbsp. olive oil
  2. 2 garlic cloves, crushed
  3. 400 g canned tomato
  4. 1 tsp. sambal oelek
  5. 1 tsp. ground cumin
  6. 1 tsp. ground coriander
  7. 1 tsp. sugar
  8. 1 tbsp. freshly squeezed lemon juice
  9. 1 tsp. balsamic vinegar
  10. salt
Instructions
  1. Remove the stem from the califlower and cook the florets in a salt water or on a rack above the boiling water, for about 10 minutes or until tender. Allow to drain and set aside.
  2. In the meantime, prepare the tomato salsa: In a medium pan, heat the olive oil and fry the garlic. Add tomatoes, sambal oelek, ground cumin, and coriander. Simmer on a medium heat for 5-10 minutes until the salsa thickens. Season with sugar, freshly squeezed lemon juice, balsamic vinegar and salt to taste. Set aside.
  3. Chop the onion into tiny pieces and cut the chives.
  4. In a large bowl, mash the cooked and drained cauliflower florets using a fork. Add an egg and whisk until combined. Add the onion, Gruyère, Parmesan and bread crumbs. Sprinkle with chives and mix all together. Season with salt and pepper.
  5. Preheat your oven to 200°C and line a baking sheet with a parchment paper.
  6. Form 15-20 croquettes egg-shaped croquettes and place them on the lined baking sheet. Smear with olive oil and put in the oven. Bake for about 30-40 minutes until golden brown.
