Fennel Salad with Goat Cheese Dressing

Crunchy fennel, apples and walnuts in a creamy goat cheese with a touch of honey and apple vinegar, accompanied by lamb’s salad.

Fennel Salad with Goat Cheese Dressing

Ingredients
  1. 150 g fresh goat cheese
  2. 2 tbsp. apple vinegar
  3. 4 tbsp. apple juice
  4. 2 tsp. honey
  5. salt and pepper
  6. 1 fennel
  7. 2 green apples
  8. 100 g lamb's salad
  9. 1 handful walnuts
Instructions
  1. Prepare the dressing. Mash the goat cheese with a fork, add vinegar, apple juice, and honey. Mix until smooth. Season with salt and pepper.
  2. Wash the fennel, remove the fennel stems (keep the feathery green leaves and chop them). Cut the bulb in half and remove the core. Slice the fennel crosswise into thin slices. Wash the apples, remove the core and cut them into thin slices. Fold the fennel and apple slices in the goat cheese dressing and keep in a refrigerator for about 15 min.
  3. Place the lamb's salad on each plate and add a portion of the fennel and apple mix. Top with walnuts and feathery green leaves.
