Zabookovala jsem tedy dv\u011b m\u00edsta a v sobotu dopoledne jsme se vydaly sm\u011br rue Ravenstein, kde se nach\u00e1z\u00ed jeho atelier.<\/p>\n<p style=\"text-align: justify;\">Cel\u00fd workshop pod veden\u00edm samotn\u00e9ho Laurenta trval&nbsp;90 minut a byl&nbsp;rozd\u011blen na dv\u011b \u010d\u00e1sti. V t\u00e9 prvn\u00ed si ka\u017ed\u00fd \u00fa\u010dastn\u00edk v\u010detn\u011b mal\u00fdch d\u011bt\u00ed mohl <strong>vyrobit sv\u00e9 vlastn\u00ed \u010dokol\u00e1dov\u00e9 medianty<\/strong>&nbsp;(takov\u00e9 \u010dokol\u00e1dov\u00e9 \u010dtvere\u010dky dekorovan\u00e9 su\u0161en\u00fdm ovocem&nbsp;a o\u0159\u00ed\u0161ky) s pomoc\u00ed ma\u0161iny, kter\u00e1 tav\u00ed \u010dokol\u00e1du na po\u017eadovanou teplotu&nbsp;do tekut\u00e9ho stavu a formi\u010dek. \u010cokol\u00e1dky jsme pot\u00e9 mohli zdobit ke\u0161u o\u0159\u00ed\u0161ky, mandlemi, pekanov\u00fdmi o\u0159echy, rozinkami, brusinkami, su\u0161en\u00fdm z\u00e1zvorem \u010di rebarborou, sezamov\u00fdmi sem\u00ednkami, cacao nibs, aj. Co v\u00e1m budu pov\u00eddat, byla to z\u00e1bava, n\u011bkdo s t\u00edm byl hotov coby dup, jin\u00fdm to trvalo&#8230; \ud83d\ude00 Pak si ka\u017ed\u00fd dal na sv\u016fj v\u00fdtvor jmenovku a v\u0161echny se \u0161ouply do lednice, kde se vychladily a nabraly formu pro vyklopen\u00ed. Hotov\u00e9 medianty jsme si nandali do s\u00e1\u010dk\u016f a odnesli dom\u016f jako suven\u00fdr. \ud83d\ude42<\/p>\n<p style=\"text-align: justify;\">Ve druh\u00e9 \u010d\u00e1sti n\u00e1m pak Laurent vysv\u011btlil rozd\u00edly mezi jednotliv\u00fdmi druhy kakaa, kter\u00e9 pou\u017e\u00edv\u00e1 ve sv\u00fdch receptech. N\u00e1sledovala <strong>degustace asi 10 pralinek\/\u010dokol\u00e1d<\/strong>, kde jsme si sami vyzkou\u0161eli rozpoznat jednotliv\u00e9 druhy kakaa, jejich chu\u0165 a vlastnosti. I kdy\u017e se zd\u00e1lo, \u017ee to trochu sm\u011b\u0159ovalo k filosofiii <em>&#8222;d\u00e1m v\u00e1m ochutnat a pak u\u017e nikdy nebudete cht\u00edt j\u00edst \u010dokol\u00e1du od nikoho jin\u00e9ho&#8220;<\/em>, hlavn\u00edm smyslem bylo uk\u00e1zat \u00fapln\u00fdm za\u010d\u00e1te\u010dn\u00edk\u016fm, jak\u00fd je rozd\u00edl mezi kvalitn\u00ed dra\u017e\u0161\u00ed a lehce dostupnou pr\u016fmyslov\u011b vyrobenou \u010dokol\u00e1dou. Zaj\u00edmav\u00e9 bylo pozorovat obli\u010deje p\u0159i zji\u0161t\u011bn\u00ed, \u017ee i v t\u00e9 tmav\u00e9 vysokoprocentn\u00ed \u010dokol\u00e1d\u011b nec\u00edt\u00edte pouze ho\u0159kost, ale i siln\u00e1 ovocn\u00e1 aroma, co\u017e v\u011bt\u0161ina lid\u00ed nev\u00ed a proto st\u00e1le preferuj\u00ed ml\u00e9\u010dnou \u010dokol\u00e1du, nejl\u00e9pe s p\u0159idan\u00fdm cukrem&#8230;<\/p>\n<p style=\"text-align: justify;\">Krom\u011b tmav\u00e9 vysokoprocentn\u00ed \u010dokol\u00e1dy ze sm\u011bsi jihoamerick\u00e9ho kakaa&nbsp;jsme&nbsp;tu&nbsp;ochutnali&nbsp;tak\u00e9 oran\u017eetky (citrusov\u00e1 k\u016fra v&nbsp; ho\u0159k\u00e9 \u010dokol\u00e1d\u011b), meru\u0148ky a datle v \u010dokol\u00e1d\u011b inspirovan\u00e9 Dubaiem, \u010dokol\u00e1du se slanou mandl\u00ed, ale tak\u00e9 klasick\u00e9 pralinky, p\u0159i\u010dem\u017e to nejlep\u0161\u00ed na z\u00e1v\u011br.
