Avocado Cream with Cashews and Cranberries

If you are looking for a trendy and super healthy snack, you should try this avocado cream with cashews and cranberries served in so-called “verinnes”, where the velvet avocado cream mingles with delicate cashew nuts and sweet cranberries. The avocado cream with cashews and cranberries is served in small glasses – verinnes. Verinne is a French expression for a small glass filled with layers of different ingredients and you taste them by combining all the layers. It can be sweet (e.g. fruit snack or dessert) or salty (e.g. veggie starter), depending on the ocassion.

And why this is a super healthy snack? Avocado and cashew contain some healthy monosaturated fatty acids, and therefore they both have a possitive impact on the cardiovascular system. Further, they are rich in proteins and vitamins B and E, they also have possitive impact on the mood (which might struggle against fall and winter depression). Regarding avocado, lines and lines can be written about this superfruit and its health benefits, but a very important fact is that it is a source of easily absorbed iron (which is important for vegetarians, adolescents and prednant women). Cashew nuts are excellent source of Coppre, Phosphorus, Manganese and Magnesium. Both cashew and cranberries have possitive impact on mouth cavity (they contain substances that can limit bacteries causing caries). Cranberries are reffered to as superfood full of antioxidants and fiber, they are known as a protection against urinary tract infection.

Ingredients
  1. 2 avocados
  2. 2 tbsp. olive oil
  3. 3 tbsp. balsamic vinegar
  4. Salt
  5. Pepper
  6. 50 g cashew nuts
  7. 40 g dried cranberries
Instructions
  1. In a medium sized pot, mash the avocado it until smooth with a fork. Add olive oil and balsamic vinegar and combine well, season with salt and pepper. Layer the verrines with a layer of avocado cream, a layer of cashew nuts and a layer of cranberries. Serve directly and taste all 3 layers together using a tea spoon.
Notes
  1. If you prepare the avocado cream in advance, add a tablespoon of lemon juice to prevent the color from turning brown.
